Big O’s in Stephenville re-opens with a greener look

Big O’s Simply Delicious finally re-opened on Sept. 22, after being closed for two months due to COVID-19. During this time, the owners remodeled the inside of the restaurant by adding higher booths, installing an aquaponics system and giving the restaurant a brand-new look.
During an interview, Sherry Weir, one of the owners of Big O’s, said, “We have been wanting to remodel the dining area for a long time when we expanded, we took all of our stuff out of storage and filled in the space, but it was a hodgepodge. We would eventually like to franchise out and in order to do that we needed Big O’s to look more uniform.”
Looking more uniform wasn’t the only goal the owners had, safety for their customers was also a primary concern according to Weir.
“When we decided to remodel, we wanted to make sure everyone could dine in safety which is why if you turn around, you’ll notice that the booth covers your mouth which limits the ability for a disease like COVID-29 to spread,” Weir said. “We even planted mother-in-law plants at the top of the of every booth because they absorb a lot of carbons in the air, so you don’t breathe it in.”
The owners of Big O’s have also added a large aquaponics system in the corner of the restaurant that allows them to grow multiple different types of produce by using fish to supply the plants with the nutrients they need to grow.
Weir said that “The idea was Olliver’s, but we have always wanted one at home and at the restaurant. One of the hardest things about owning a restaurant is dealing with the food supply chain. We always start locally and expand the food chain out because it’s easier.”
Using this Aquaponics system allows Big O’s to grow and gather produce in house while also limiting store’s carbon footprint, which Weir said was very important to them. Big O’s Simply Delicious looks like an entirely new restaurant, while still managing to keep its original atmosphere as a welcoming place to grab something to eat in Stephenville. Big O’s held a Grand Re-opening ceremony on Monday, Sept. 28 that started at 12:30 p.m. KTRL hosted a live broadcast from 12:30 p.m. to 2:00 p.m. and the owners of Big O’s handed out free T-shirts as well as other prizes that were donated by the other shops in the strip mall
